Ingredients
- 1 cup flour
- 1/3 cup sugar (brown or white)
- 4 teaspoons baking powder
- 1/2 teaspoon salt
- 1 teaspoon cinnamon
- 1/2 teaspoon ginger
- 1 cup pumpkin puree
- 2 eggs
- 1 cup milk
- 1/3 cup oil
Directions
Mix flour, sugar, baking powder, salt, cinnamon and ginger. Then stir in pumpkin, eggs, milk and oil. Pour into hot pan or onto griddle. Cook on both sides.
