Ingredients
- 1/2 lb breakfast sausage, cooked and drained
- 2 cups fresh or frozen spinach
- 1/2 cup cheddar cheese, shredded
- 6 large eggs
- 1/2 cup heavy cream
- 1/2 cup milk
- 1/4 teaspoon salt
- 1/4 teaspoon ground black pepper
Directions
Preheat oven to 375. Coat a muffin tin with cooking spray.
In a bowl, mix together all the ingredients. Evenly distribute the mixture between the muffin cups.
Bake until starting to brown and look set, approximately 15-20 minutes.
Let stand 10 minutes before serving.
