Ingredients
- 3/4 cup margarine or butter
- 1 1/2 cups brown sugar
- 12 oz semi sweet chocolate chips
- 2 eggs
- 2 1/2 cups flour
- 1/2 teaspoon salt
- 1 1/4 teaspoon baking soda
- Andes-brand chocolate mint candies
Directions
Melt butter and brown sugar with 2 tablespoons water over medium low heat. Add chocolate chips and stir until melted. Remove from heat and let sit for 10 minutes. Then beat in eggs, one at a time. In a large bowl, combine flour, salt and baking soda. Add to chocolate mixture, stir and chill for 1 hour. Cover cookie sheet with foil. Roll chocolate mixture into 1 inch balls. Place balls about 2 inches apart on foiled cookie sheet. Bake at 350° 12 to 13 minutes. Remove cookies from oven and place one mint on top of each cookie while still hot. When mint melts, spread over top of cookie with knife.
