Ingredients
- 2 large potatoes, roughly peeled and thinly sliced
- 1/2 cup grated swiss cheese
- 2 green onions, finely chopped
- 3/4 cup heavy cream
Directions
Preheat oven to 375. Spray muffin tin with vegetable oil spray. Layer potato slices, cheese, and onion into each muffin cup. Season with salt and pepper, and top with 1 or 2 tablespoons heavy cream. Cover with foil and bake for 30 to 40 minutes. Remove the foil halfway through cooking time.
