Ingredients
- 3 large potatoes, peeled and cubed
- 1 cup sour cream, divided
- 3 tablespoons butter
- 1/4 lb bacon
- 1-2 lbs ground beef
- 1 1/2teaspoons paprika
- 1 1/2 teaspoons cumin
- Salt and Pepper to taste
- 2 tablespoons fresh thyme
- 1 medium onion, chopped
- 2 carrots, diced
- 2 celery ribs, chopped
- 1 red bell pepper, chopped
- 1 lb frozen peas
- 2 tablespoons flour
- 1 cup chicken broth
Directions
Salt potatoes, and cover them with water and boil until tender. Begin mashing the potatoes, and add in 1/2 cup of the sour cream and the butter.
In a separate skillet, brown bacon, and then add the ground beef. Once ground beef is browned, season it with paprika, cumin, salt, pepper, and thyme. Add onions, carrots, celery, and peas. Cook until veggies are tender. Stir in flour and cook for 2 more minutes.
Add stock and combine. Stir in 1/2 cup of the sour cream and simmer the mixture over low heat.
Preheat the broiler to high.
Pour hamburger mixture into the bottom of a casserole dish. Top with the mashed potatoes. Broil until the potatoes are golden at the edges.
