Salerno’s Salad (Our Version)

Ingredients

  • 1 large head romaine lettuce, chopped
  • 1 (8 oz) package of fresh mushrooms, sliced
  • 1 cup mozzarella cheese. shredded
  • 1 can black olive, sliced
  • 1 cup celery, thinly sliced
  • 2 tablespoons mayo
  • 2 tablespoons red wine vinegar
  • 1 garlic clove
  • 1/2 teaspoon dried oregano
  • 1/4 cup plus 2 tablespoons Extra Virgin Olive Oil
  • salt and pepper to taste

Directions

In a large bowl, toss lettuce, mushrooms, cheese, olives, and celery.

Mix all other ingredients of the dressing together well. I usually do this in a jar, but you can also use a smaller bowl.

Pour dressing on salad mix, and toss to cover. Do this right before serving.
