Ingredients
- 6 boneless/skinless chicken breast
- 1 green pepper, cut in strips
- 1 large onion, sliced thick and separated
- 1 small can of pineapple chunks, drained
- 1 (16 oz) can of crushed pineapple
- 1/2 cup of soy sauce
- 2 tablespoons of onion powder
Directions
Brown the chicken breasts in olive oil, and place in a glass baking dish.
Cover with the green pepper, the onion, and the pineapple chunks.
Mix in a small bowl (or blender), puree the crushed pineapple, soy sauce, and onion powder.
Pour over chicken and vegetables. Cover pan with foil and bake at 350° for 30-45 minutes. Serve with rice.
