Ingredients
- 2 tablespoons butter or margarine
- 1/3 cup onion
- 1/3 cup green peppers
- 1/3 cup chopped celery
- 1 clove fresh garlic
- 1/2 cup frozen okra
- 1 1/2 cups canned tomatoes
- 1 cup chicken broth
- 2/3 teaspoon salt
- 1/3 teaspoon sugar
- dash of pepper
- Pinch of thyme
- 1 bay leaf
- 1 cup cooked chopped chicken
Directions
Sauté onion, green pepper, celery and garlic in butter. Add okra, tomatoes, broth and seasonings. Simmer 30 minutes, add chicken and simmer until chicken is heated through. Serve over rice.
