Ingredients
- 1 1/2 lbs ground hamburger
- 1 1/2 teaspoons salt
- 1 teaspoon pepper
- 1/2 teaspoon onion salt
- 1/2 teaspoon garlic salt
- 2 tablespoons chili powder
- 1 teaspoon cumin powder
- 1 medium onion (diced)
- 1 medium bell pepper, if desired
- 2 cloves garlic, crushed
- 1 (15 oz) can tomatoes, stewed or diced
- 1 (15 oz) can ranch style beans
- 1 cup rice, uncooked
- 8 oz water
- 1 dozen corn tortillas (optional)
Directions
Toppings: chopped onions, grated cheddar cheese, corn tortilla (may be torn up and stirred into the casserole), guacamole, salsa
In an electric skillet, brown and season the ground beef. Add the onion and garlic and sauté until clear. Pour in the tomatoes and beans. Sprinkle the uncooked rice over the other ingredients and add the water. Simmer covered until the rice is cooked. (Check periodically to make sure the skillet is not cooking dry. If so, add more water.) Mama D used to tear the tortillas and stir them into the casserole or “bury” whole tortillas in the casserole until they softened. If she buried them, then she would place one on a plate, add a liberal serving of the goulash, and finish it with requested toppings.
