Ingredients
- 2 eggs
- 2 half egg shells of water
- 1 tablespoon salt
- 2 cup flour
Directions
Beat eggs until light with hand mixer. Stir in water and salt. Add the 1/2 the flour and mix. Using hands, work in the other 1/2 the flour into mixture. The dough will be stiff. Generously, flour a surface and kneed dough. Make 3 balls of dough. Roll out each ball to desired thickness (use flour as needed). Cut into thin noodle strips (approx. 1/4”). Separate and toss in flour. (You could freeze the dough at this stage). Let dry and spread flour over the noodles to help them dry. Drop noodles into boiling bone broth (2 quarts). Boil for 10 minutes. This makes enough for about 6 people.
Notes
You can add chicken to the boiling noodles and use broth. The flour will make the broth thicken. Use a whole chicken with a doubled noodle recipe. Also good with mashed potatoes.
