Cherry Cake

Grandma R. makes this cake for birthdays and special occasions. It is one of my favorites.

Ingredients

  • 2 3/4 cup flour
  • 1 3/4 cup sugar
  • 4 tablespoons baking powder
  • 1 teaspoon salt
  • 2/3 cup soft shortening
  • 1/3 cup cherry juice
  • 2/3 cup milk
  • 5 egg whites
  • 1/2 cup chopped nuts
  • 16 cherries cut in 1/8ths

Combine flour, sugar, baking powder, and salt. Add shortening, cherry juice, and milk. Beat for 2 minutes. Add egg whites. Beat for 2 minutes. Fold in nuts and cherries. Bake for 35-40 minutes.
